Delicious autumn muffins made with whole wheat einkorn flour, fresh apples, and pumpkin purée. Topped with a sweet crumb topping for the perfect fall treat.
Preheat oven to 350°F. Grease a 12-cup muffin tin or line with paper liners.
Peel and finely chop one medium apple. Weigh out 150g and place in a medium mixing bowl.
Add maple syrup, pumpkin purée, applesauce, oil, vanilla, salt and pumpkin spices to chopped apple and stir to combine.
Add einkorn flour, baking powder, and baking soda and stir just until combined.
Divide batter evenly into prepared muffin tin. Batter will be very thick.
In a small bowl combine oil, maple syrup, and einkorn flour, mixing until a crumbly mixture forms.
Sprinkle crumb mixture over muffin batter.
Bake for 22-25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
